  • large handful of beans, cut up
  • Rice Noodles Olive
  • Oil to cook

  • 1 table spoon brown sugar
  • 2 table spoons light soy sauce
  • 1 table spoon fish sauce

1. Prepare the noodles as instructed on the packet

2. Combine Sauce ingredients in separate bowl and stir together.

3. Drizzle olive oil in pan add chicken once oil is hot. Brown Chicken in Fry pan once cooked through remove from pan and add onion and cook onion until translucent. Add Capsicum, Carrots and Beans. You may need to add a little more oil to cook with. With my eggs I tend to give them a quick fry on a separate frypan as it is easier but once veggies a soft you can move them to one side of the pan and cook your egg than mix through.

4. Once veggies are soft add egg if they have been cooked on a separate pan and add Chicken back in to the pan and mix through. reduce heat and add sauce ensuring you coat all ingredients and let simmer for 4 – 5 minutes.

5. Add Rice noodles and mix through and serve.
