
Ok,so you’re probably thinking how is this dad’s famous meat loaf? simply because I took something that was awesome and made it even better!
INGREDIENTS
- 750g Beef mince
- 250g Pork mince
- 1 brown onion, chopped
- 3 garlic cloves, crushed
- 1 1/2 cups breadcrumbs
- 2 egg, lightly beaten
- 1 tablespoon Worcestershire sauce
- 1/4 Cup tomato sauce
- bunch of chopped parsley
- 2 table spoons oregano
- salt
- pepper
You can get creative and also add boiled eggs to the mix or some spring onions which I also find delicious!
GLAZE
- 2 tbsp cider vinegar
- 1 tbsp brown sugar
- 1/2 cup tomato ketchup
DIRECTIONS
- Combine minced meat, onion, egg, worcestershire sauce, tomato sauce, oregano, salt, pepper and parsley into a bowl and mix to combine. Once ingredients are mixed add bread crumbs and mix through. place into a lightly oiled baking dish and form an even loaf.
- combine glaze ingredients in a separate and stir to mix.
- Spread half the glaze over the loaf.
- Bake loaf in oven at 180°C for 30 minutes, remove from oven and spread the rest of the glaze over the top of the loaf and bake for a further 30 minutes.
