Slow Cooker Lamb and Potatoes

Simplicity is sometimes best and this slow cooker lamb with potatoes is full of flavor and left overs can be used to make pulled lamb burgers or sandwiches the next day.

INGREDIENTS

  • Leg of Lamb
  • 1 Cup beef stock
  • 2 heaped tablespoons rosemary, chopped (fresh or dry)
  • 3 Cloves of garlic, crushed
  • Potatoes to cover the bottom of your slow cooker
  • Salt
  • Pepper
  • Olive Oil to coat bottom and sides of slow cooker

DIRECTIONS

  1. Peel potatoes and cut into quarters. Coat your slow cooker in olive oil then place potatoes across the bottom of the slow cooker.

2. Rub salt and pepper on the leg of lamb and then place into the slow cooker on top of potatoes. Add the cup of beef stock, crushed garlic and rosemary.

3. place lid on slow cooker and cook on low for 8 hours or high for 6 hours. Lamb should fall apart and easily be pulled apart with forks once cooked.

4. Serve with your favorite sides and enjoy the simplicity of this wonderful full flavor slow cooked lamb recipe. Lunch time bonus – you can use left over lamb for burgers or toast. If you feel like pizza the lamb makes wonderful pizza toppings.
