
This slow cooker pulled pork recipe will change the way you eat pork forever!
INGREDIENTS
- Pork Shoulder (I used an unskinned, unboned 2.5kg shoulder)
- 1/2 cup chicken stock
- 1 cup BBQ sauce
- 1/2 cup apple cider vinegar
- 1 tablespoon Dijon or french mustard
- 1/4 cup brown sugar
- 1 tablespoon Worcestershire sauce
- 1 large brown onion, diced/minced
- 3 cloves of garlic, minced
- 1 and 1/2 teaspoons thyme
- Optional extra – 1 tablespoon chili powder
DIRECTIONS
- Using a sharp knife remove skin and excess fat, discard skin (or make crackle!)
- Smear the bottom of your slow cooker and sides with a little olive oil and place all the ingredients into the slow cooker and then place the pork on top (without the skin and fat)
- Cook on high for 6 hours rotating the meat at the 3 hour mark. Once cooked with two forks shred the meat and remove bones.
- Serve on bed of mashed potatoes
