Longganisa Sausage Recipe

Longganisa a traditional Filipino sausage, is a flavourful mix of sweet, savoury and garlicky goodness. This recipe is perfect for making longganisa at home, whether you enjoy it fresh or cured. The following steps will guide you through creating this delicious dish using these ingredients.

Ingredients

  • 1 kg pork mince (preferably with some fat content)
  • ¼ cup brown sugar
  • 8 cloves of garlic (minced)
  • 2 tablespoons paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper (ground)
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar

Method

Before starting, ensure all your ingredients are measured and prepared:

  • Mince the garlic finely. If you prefer a smoother texture, you can use a garlic press.
  • Use freshly ground black pepper for a more aromatic flavor.
  • Ensure the pork mince has a fat content of at least 20% for a juicy sausage. If your pork is too lean, consider adding pork fat or bacon trimmings.
  • In a large mixing bowl, combine the pork mince, brown sugar, minced garlic, paprika, salt and black pepper.
  • Add the soy sauce and apple cider vinegar. These ingredients not only enhance the flavour but also act as mild preservatives.
  • Using your hands (or a sturdy spatula), mix the ingredients thoroughly. Ensure the seasoning and spices are evenly distributed throughout the pork mince.
  • If you like you can take a small amount of the seasoned pork mixture and fry it in a pan to test the flavour.
  • Adjust the seasoning as needed, adding more sugar for sweetness, vinegar for tanginess, or salt for savouriness.

Shaping the Sausage

  • Prepare Sausage Casings: If using natural or synthetic casings, rinse them well and soak them in water to soften.
  • Fill the Casings: Use a sausage stuffer or a piping bag to stuff the pork mixture into the casings. Twist the casings every 3-4 inches to form individual links.
  • Tie off the ends securely to prevent spillage.

Skinless

  • Divide the pork mixture into small portions, about 2-3 tablespoons each.
  • Roll each portion into a sausage shape (roughly 4 inches long).
  • Place the sausages on a tray lined with wax paper. For convenience you can also wrap each sausage individually in wax paper or plastic wrap.

Cooking Longganisa

  • Heat a non-stick pan over medium heat. Add a small amount of oil to the pan.
  • Place the longganisa in the pan and cover with a lid. Let it cook rotating sides for 5-7 minutes to ensure the sausage is cooked through.
  • remove the sausages once golden brown and slightly caramelized.

Serving suggestions

Longganisa is best enjoyed as part of a classic Filipino breakfast called Longsilog, which includes:

  • Sinangag (Garlic Fried Rice): Cook rice with minced garlic, a splash of oil, and a pinch of salt.
  • Itlog (Eggs): Serve fried, scrambled, or sunny-side-up eggs alongside the sausages.
  • Vinegar Dipping Sauce: Mix white vinegar, minced garlic, chili, and a pinch of sugar for a tangy dipping sauce.

Additions

  • For a Spicy Kick: Add ½ teaspoon of cayenne pepper or chili flakes to the pork mixture.
  • For Smokiness: Use smoked paprika instead of regular paprika.
  • Alternative Meats: Swap pork for chicken, turkey, or even beef if desired. Adjust fat content accordingly.
