Don’t be fooled by this tasty Ricotta pasta recipe appearance it is full of flavour and will leave you wanting more!


  • 1 cup Ricotta cheese
  • 400g fettuccine or spaghetti pasta, or your choice of pasta
  • 2 cloves garlic ($0.16)
  • 1/2 cup parmesan cheese
  • 1 cup pasta water (the water in the bowl that you have cooked the pasta in)
  • salt and pepper to taste


  1. In a large pot of boiling salted water, cook pasta according to package directions. Reserve 1 cup pasta water, then drain and return pasta to pot.
  2. While pasta is cooking heat a fry pan on medium high heat, add a drizzle of olive oil and saute garlic for 30 seconds or until fragrant. Add ricotta and break up by stirring with a cooking spoon.
  3. Then add parmesan cheese and 1/2 cup pasta water and simmer for 5 mins until mixture has become a thick cream. Add more pasta water if you’d like a thinner sauce.
  4. Add mixture to strained pasta and stir through and coat the pasta in the sauce.
  5. If you want to be a lil ‘fancy‘ you can sprinkle some chopped parsley on top of the dish, but not needed.
