This wonderful home made Chicken and Veggie Soup is a go too favourite at home, a meal the whole family can enjoy.

INGREDIENTS

  • 6 Chicken Drumsticks, skinned
  • 2 Carrots peeled and sliced
  • 2 Celery sticks, sliced
  • 2 Medium sized potatoes, peeled and cubed
  • 1 Large brown onion cut
  • Hand full of Parsley, chopped
  • 4 Cups Chicken stock
  • 2 cups of water
  • 1 Tin diced Italian tomatoes

DIRECTIONS

  1. In a large saucepan pour in 4 cups chicken stock, 2 cups water, chicken drumsticks, onion and parsley. Bring to the boil and simmer for 30 minutes.
  2. After 30 minutes pull chicken away from bone, separate gristle and small bone. Place shredded chick and bare bones back into pot.
  3. Add vegetables and simmer for a further 30 minutes until vegetables and chicken are soft.

OPTIONAL
You can serve with pasta noodles or pastina to make chicken noodle soup.
