One Week Challenge: Day Four

Day Four

Here we are in my One Week Challenge: Day Four, at the half way point and feeling great! My diet has been ok over the past three days so today I wanted something a little more fatty and filling, you’ll need to read on to see what I had, I’m sure you will love it!

Mushroom and Ham Frittata

So what did I have for breakfast on my one week challenge: day four? I have been craving a mushroom and ham frittata for a few days now. Unfortunately each time I think I’ll whip one up, dad’s kitchen gets a request. Can’t say I’m complaining as yesterdays crepes were lovely!

Lunch was easy, we had plenty of left overs from last nights leg of lamb so it was a roast lamb sandwich, nothing too extravagant but there is something really nice about a roll or sandwich filled with just lamb and gravy. You can be creative and add what you like. But ease of food was too appealing to me, less clean up also.

Pork Burger with the lot

Ok, ok, go easy on me. I have been smashing out this challenge because I don’t want to get to the end of it and not meet the goal, in fact I probably went a little too hard and haven’t been eating enough.

So what did I use all those unused calories from the previous three days on? and what do I mean by excess calories? well there are a number of ways to lose weight and I’ll fill you in on my technique in another blog.

I made, a lovely, greesy, delicious pork burger! It’s my invention on Italian/Australian fusion food. Pretty much a giant Italian meat ball flattened and fried like a burger. Almost a cross taste between an Italian meatball without sauce and a dumpling. You need to try the recipe to know what I mean.

I’m still on parent leave for this week so plenty of available time and Tahlia wanted to ride past Pelican lake, which is our made up name for the lake down to road where pelicans live.

Tahlia enjoys watching the giant birds land in the lake, on the odd occasion they have miscalculated their trajectory and crash landed into the lake. She cracks up, I have to admit, there is something quite humorous about a giant bird crash landing into the drink.

I also supplemented my bike ride with my Back & Abs workout which can be found on the main menu.

Wasn’t really hungry today, the omelette kept me going until lunch and lunch kept me going until dinner. That’s a clear indication of meeting my calorie requirements.

I hope you enjoyed my One Week Challenge: Day Four. Let me know your thoughts below and don’t forget to check out the recipes below.
