Scotch Fillet Stir Fry

This Scotch Fillet Stir Fry is easy to make and packed with all your dietary requirements and is a meal the whole family will enjoy.

Scotch Fillet Stir Fry INGREDIENTS

  • Olive oil for frying
  • 750g to 800g Scotch Fillet Steak (you can buy them whole and cut them into strips yourself or ask your butcher)
  • 2 brown onion, diced
  • 1 large red capsicum, cubed
  • 1 Cup corn, or use baby corn
  • 2 carrots
  • 2 Eggs scrambled
  • Handful of beans
  • 2 garlic cloves, crushed
  • Rice noodles or your preferred noodles

For the Sauce

  • 1 tablespoon water
  • 2 tablespoons oyster sauce
  • 1 1/2 tablespoons soy sauce
  • 1 to 2 table spoons unsalted butter (can substitute with margarine)

Directions

  1. prepare wok ready noodles as instructed on packet, cover and set aside.
  2. Heat a large fry pan or wok over medium to high heat. Once hot enough add roughly 2 table spoons olive oil and add beef and cook for 2 minutes or until browned. You can coat the beef in two table spoons of plain flour prior to frying to prevent the fat stewing the beef while cooking. once cooked transfer beef to plate and return frying pan/Wok
  3. Add onion to fry pan once onion becomes translucent add garlic and mix in for 30 seconds or until fragrant. Add the remaining vegetables and stir fry for 2 to 3 minutes depending on the texture you prefer.
  4. Return beef to pan, add sauce ingredients and stir through to coat ingredients. Add wok ready noodles and stir through. Turn off heat and serve.

For parents of fussy eaters

If like us you have a fussy eater in the house that won’t eat the recipe with sauce. When returning beef to fry pan/wok you can set some aside for them, this can also be done with the noodles or any of the other stages.

Our daughter will often request Plain Stir Fry, indicating she would like steak and noodles for dinner. I guess it’s better than Steak & Chips.
